8 fillets of sole, skinned
Plain flour
2 tablespoons olive oil
4 oz. Butter
1/4 pint white wine vinegar
1/4 pint water
8 oz. White grapes, halved
2 tablespoons pine nuts
Salt and freshly ground black pepper

Coat the fish fillet lightly in flour.  Heat the oil and butter in a large pan, and sauté the fish gently until golden brown on both sides.  Add more oil or butter if necessary.  Place the filets on a serving dish and keep warm.  Add the white wine vinegar to the frying pan with the water, grapes and pine kernels;  season, and simmer gently for 5 to 7 minutes, until the liquid has almost evaporated.  Pour the contents of the pan over the fish and serve. Makes 4 servings.
