2 cups heavy cream 1/2 cup grated Parmesan cheese 2 tablespoons butter, softened 1 package (9 ounces) spinach (either meat or cheese filled) Tortellini
Heat cream to boiling in a saucepan, adjusting heat to prevent cream from boiling over, until reduced to 1 cup, about 10 minutes. Stir in Parmesan cheese. Meanwhile, cook the Tortellini in plenty of boiling salted water according to package directions, usually about 7 minutes; drain. Toss with butter. Distribute the Tortellini evenly among 4 serving plates; spoon sauce over each dish. Makes 4 servings.
