1/3 cup coarsely chopped fresh sage 1/2 cup lemon juice 1/4 cup plus 1 tablespoon olive oil, divided 2 tablespoons minced garlic (about 6 cloves) 1 teaspoon ground pepper 1 cut-up whole chicken (about 3 1/2 pounds), skin removed Salt to taste
In a medium bowl, with back of large spoon, crush sage against the side of the bowl to release more flavor. Add lemon juice, 1/4 cup of the oil, the garlic and pepper; whisk together well. Place chicken and marinade in zippered plastic bag or glass or plastic dish; turn to coat evenly. Close bag or dish and cover. Refrigerate 6 to 10 hours. Prepare medium hot charcoal fire or preheat gas grill to medium high. Remove chicken from marinade, shaking off excess; discard marinade. Season both sides with salt. Grill chicken about 10 minutes per side, or until no longer pink in the center. Brush with remaining 1 tablespoon of oil as it cooks. Serves 6.
