18 navel oranges 2 large red onions, very thinly sliced crosswise 1 cup Moroccan oil-cured olives 1 tablespoon crushed red pepper 1/2 cup extra virgin olive oil Salt
Using a sharp knife, peel the oranges; make sure to remove all the bitter white pith. Slice the oranges crosswise about 1/4 inch thick. Arrange half of the orange slices on a large platter. Scatter half the onion slices, olives, red pepper and oil over the oranges and season lightly with salt. Top with the remaining ingredients and serve at room temperature. Serves 20.
