1 1/4 cups cornmeal 3/4 cup all purpose flour 1 tablespoon baking powder 1/4 teaspoon baking soda 1/4 teaspoon salt 2 eggs 1 cup buttermilk or sour milk 1/4 cup honey or maple flavored syrup 2 tablespoons margarine or butter, melted, or cooking oil
In a mixing bowl stir together cornmeal, flour, baking powder, baking soda, and salt. In another bowl beat together eggs, buttermilk, honey or syrup, and melted margarine or butter or cooking oil. Add to cornmeal mixture and stir just until combined. Do not over-beat. Pour into a greased 9 x 9 x 2 inch baking pan. Bake in a 425 degree oven for about 20 minutes or until golden brown. Makes 9 servings.
