6 tablespoons warm water 6 tablespoons creamy peanut butter 3 tablespoons oriental sesame paste 3 tablespoons Chinese rice wine or dry sherry 3 tablespoons white rice vinegar 2 tablespoons light soy sauce 1 tablespoon hot chili flavored oriental sesame oil 1 tablespoon minced fresh gingerroot 2 garlic cloves, crushed 3 teaspoons oriental sesame oil 8 ounces fresh Chinese noodles or thin spaghetti 1 scallion, trimmed and sliced thin 1/4 cup coarsely chopped fresh coriander (cilantro)
In the bowl of a food processor or with a whisk, blend the water, peanut butter, sesame paste, wine, rice vinegar, soy sauce, chili-flavored sesame oil, ginger, garlic, and 2 teaspoons of the sesame oil until smooth. Cook the noodles in plenty of boiling salted water until al dente, or firm to the bite, about 5 minutes; drain well; rinse with cold water and drain again. Pat dry with paper toweling. In a large bowl, toss noodles with remaining 1 teaspoon sesame oil. Add the peanut mixture to the noodles, toss to blend. Sprinkle with the scallions and coriander; toss just once and serve. Makes 4 servings.
