1/2 cup granulated sugar 1/2 cup packed light brown sugar 2 - 3 tablespoons powdered instant coffee 2 teaspoons vanilla extract 1 3/4 cups all purpose flour 1 tablespoon baking powder 1/2 teaspoon salt 2 eggs 2/3 cup milk 1 1/2 cups coarsely chopped walnuts 3/4 cup Hershey's semi-sweet chocolate chips
Heat oven to 350 degrees. Line 12 muffin cups (2 1/2 inches in diameter) with paper baking cups. Beat butter, granulated sugar, brown sugar, coffee and vanilla in large bowl until creamy. Stir together flour, baking powder and salt. Beat together eggs and milk; add alternately with flour mixture to butter mixture, stirring just to combine. Stir in walnuts and chocolate chips. Fill muffin cups 1/2 full with batter. Bake 20 to 25 minutes. Cool 5 minutes; remove from pans to wire rack. Cool completely. Makes 12 muffins.
