1/2 cup chopped onion 1/2 cup chopped celery 1/2 cup chopped carrots 1 tablespoon safflower oil 1 tablespoon sherry 1/4 cup flour 1 teaspoon paprika 1 teaspoon white pepper 2 cups vegetable bouillon broth 2 cups skim milk blended with 1 cup non-fat powdered milk 3/4 cup grated low fat Cheddar cheese 1 tablespoon parsley
Cook onion, celery and carrots in oil until tender, but not brown. Blend in sherry, flour, paprika and pepper. Whisk in bouillon broth and milk. Stirring constantly, cook over medium heat until thick and bubbly. Slowly stir in grated cheese and parsley. Serves 4.
