1 cup mashed sweet potatoes 1 cup sugar 2 1/2 tablespoons butter, melted 2 eggs, separated 1 teaspoon vanilla 1 1/2 cups scalded milk 1 pinch of nutmeg
Mix potatoes, sugar, and butter; beat well. Add egg yolks, vanilla, milk, and nutmeg; beat total mixture well. Beat egg whites stiff, and add them last; stir well. Pour into a 9 inch pie shell. Bake at 400 degrees for 30 minutes, then reduce heat to 350 degrees for 30 minutes or until done.
