2 teaspoons butter 1 cup chopped onion 2 cups clam juice 2 cups potatoes, peeled and diced 1 cup sea scallops 1 pound flounder fillets 1 cup lobster meat 2 cups skim milk 1/2 cup skimmed evaporated milk 1 tablespoon parsley Pinch of nutmeg Salt and pepper to taste
In a large pot, sauté onion in butter until clear. Add clam juice and potatoes. Simmer until potatoes are tender. Cut sea scallops and flounder into bite sized pieces. Add scallops, flounder and lobster meat to pot. Simmer 10 minutes. Reduce heat and add remaining ingredients. Heat well, but do not boil. Makes 6 servings.
