2 cups flour 2 teaspoons baking powder 1 teaspoon salt 1/2 teaspoon soda 1 teaspoon cinnamon 1 1/2 cups cooking oil 2 cups sugar 4 eggs 2 cups grated carrots 1 cup chopped nuts 1 small can crushed pineapple
Sift the flour, baking powder, salt, soda and cinnamon and set aside. Mix oil and sugar together. Add eggs one at a time; beat after each addition. Add dry ingredients; mix well. Add carrots, nuts and pineapple. Pour in greased and floured tube pan. Bake at 350 degrees for 1 hour.
Cream Cheese Frosting:
1 (8 oz.) package cream cheese 1/2 cup margarine 1 pound powdered sugar 2 teaspoons vanilla
Mix all ingredients well and spread on cake.
