2 medium sized acorn squashes 8 tablespoons maple syrup 4 tablespoons frozen orange juice concentrate 2 teaspoons cinnamon 4 pinches of salt Boiling water
Preheat the oven to 375 degrees. Cut squash lengthwise to show shape. Scoop out seeds and stringy fibers. Place in a deep baking dish, open side up, so halves fit snugly into the dish. Fill center of each squash half with 2 tablespoons maple syrup, 1 tablespoon orange juice concentrate, 1/2 teaspoon cinnamon and a pinch of salt. Place baking dish on oven rack, then carefully pour 1 inch of boiling water in pan to surround squash. Bake 40 minutes, or until tender and golden brown. Serves 4.
