Crust: 1/2 cup margarine 1 1/4 cup sifted flour 1/3 cup sugar 1/4 teaspoon vanilla
Filling: 1 package 8 oz. Cream cheese 2 eggs 1/4 cup sugar 1/2 teaspoon vanilla
Topping: 4 cups peeled sliced apples 1/3 cup sugar 1/2 teaspoon cinnamon 1/4 cup sliced almonds 1/2 cup apricot preserves 2 tablespoons water
Crust: Mix on medium speed margarine, flour, sugar and vanilla. Mix until blended, putting in a little at a time. Pat into bottom and sides of 9 inch springform pan. Bake in preheated 400 degree oven for 5 minutes. Cool for 5 minutes.
Filling and Topping: Cream the cream cheese, sugar, eggs, and vanilla. Pour into partially cooled crust. Toss apple slices in sugar and cinnamon. Place on cream cheese filling. Top with sliced almonds. Bake in oven at 400 degrees for 25 minutes or until apples are done. Cool. When cool, melt apricot preserves with water and brush top of cake to give it a nice glaze.
