Crust: 2 cups flour 1/2 cup butter 1/2 cup margarine 3/4 tablespoon ice water
Cut butter and margarine into flour with knife or pastry blender until consistency of cornmeal. Add ice water gradually and work in just enough to hold together. Roll out on lightly floured board or marble slab to 1 inch thickness; refrigerate 20 minutes. Remove and roll again to 1/8 inch thickness. Use flat pan or baking sheet and cover with prepared crust.
Filling: 11 to 12 medium New York State apples 1 cup sugar 1 tablespoon cinnamon 1/2 cup maple syrup Juice of 1/2 lemon Sharp Cheese, sliced
Peel, core and cut each apple into six sections. Arrange in one layer on crust. Mix sugar and cinnamon and sprinkle over apples; sprinkle with lemon juice. Bake 20 minutes in preheated 450 degrees oven. Reduce heat to 350 degrees and bake another 30 minutes. Remove from oven, sprinkle with maple syrup and serve with warm slices of cheese.
