2 cups all purpose flour 1 1/2 cups sugar 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1/4 teaspoon ground cloves 1/4 teaspoon ground ginger 1 cup applesauce 1/4 cup buttermilk 1/4 cup margarine or butter softened 1/4 cup shortening 1/2 teaspoon vanilla 3 eggs 2 cups chopped peeled apples Apple Brandy Glaze (see below)
In a large mixing bowl combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg, cloves, and ginger. Add applesauce, buttermilk, margarine or butter, shortening, and vanilla. Beat with an electric mixer on low to medium speed until combined. Beat 2 minutes on medium to high speed. Add eggs and beat 2 minutes more. Fold in chopped apples. Pour batter into a greased 13 x 9 x 2 inch baking pan. Bake in a 350 degree oven for 35 to 40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Drizzle with Apple Brandy Glaze. Serves 12.
Apple Brandy Glaze: In a small bowl stir together 1 cup sifted powdered sugar, 1 tablespoon apple brandy or apple juice, and 1/4 teaspoon vanilla. Stir in additional apple brandy or apple juice, 1 teaspoon at a time, until mixture is of drizzling consistency.
