2 tablespoons olive oil 1 small fennel bulb, cut into fine 2 inch long strips 2 leeks, white part only, cleaned and cut into fine 2 inch long strips 1 carrot, cut into fine 2 inch long strips 1 zucchini, cut into fine 2 inch long strips 1 garlic clove, finely minced 1/4 teaspoon tarragon Dash sea salt and pepper to taste 4 fillets of flounder, about 3/4 pound each 4 tablespoons fresh lemon juice
Preheat the oven to 400 degrees. Cut 4 large sheets of heavy aluminum foil large enough to accommodate the fish. Heat olive oil in a large skillet and sauté the vegetables and garlic to soften vegetables. Season with salt and pepper. Spread vegetables evenly over the 4 fish fillets. Sprinkle 1 tablespoon lemon juice over each fish. Enclose fish in the foil and crimp the edges together well. Place the foil package of fish on a baking sheet and bake for 20 minutes, or until fish is cooked through. Serves 4.
