1 1/2 pounds filet of sole Salt and ground black pepper 1/2 cup dry white wine 5 tablespoons butter 1/2 pound mushrooms, sliced 1 tablespoon lemon juice 1 tablespoon flour Chopped parsley
Sprinkle the filets on both sides with salt and black pepper and place them in a buttered baking dish. Pour in the wine. Bake in a preheated 350 degree oven for 25 minutes or until the fish flakes when tested with a fork, basting once with the wine. Dot the fish with 2 tablespoons of the butter. Brown in the broiler 4 inches from the heat. Arrange the fish in a ring on a warmed serving plate. Reserve the liquid. Meanwhile, sauté the mushrooms in 1 tablespoon of the remaining butter. Sprinkle them with the lemon juice; salt and pepper to taste. With a perforated spoon, transfer the mushrooms to the center of the serving plate. Blend the flour with the remaining 2 tablespoons butter and add to the fish pan liquid. Mix well and boil 2 minutes or until thickened. Season with salt and pepper. Spoon sauce over dish, sprinkle on mushrooms and parsley. Serves 4.
