4 large oranges 2 cups vanilla ice cream, slightly softened 3 ounces Triple Sec 1 egg white 2 tablespoons sugar Mint sprigs
Slice tops off the oranges. Scoop out pulp. Set shells aside. Coarsely chop pulp in processor using 1 to 2 on/off turns; drain well. Transfer 1/4 cup pulp to medium bowl; discard remainder. Add ice cream and Triple Sec and mix well. Divide mixture among orange shells. Freeze overnight. Preheat oven to 400 degrees. Beat egg white with sugar until stiff peaks form. Arrange oranges on baking sheet. Top each with some of the meringue, sealing to edges. Bake until meringue browns slightly about 4 to 5 minutes. Garnish with mint sprigs. Serve oranges immediately. Serves 4.
