6 ounces lean bacon or lean salt pork, diced Extra virgin olive oil 6 ounces sliced Emmenthal cheese 1 pound fresh spinach, washed and dried, large leaves cut in half 3 kiwis, peeled and thinly sliced 1 tablespoon pine nuts Salt Juice of 1/2 lemon
Lightly brown the bacon in a little olive oil. Cut the cheese into strips. Put the spinach, kiwi, bacon, Emmenthal cheese, and pine nuts into a salad bowl. Dress with oil, salt, and lemon juice. Gently combine and let sit for 10 minutes before serving. Serves 8.
