1/4 Lb. Snow peas 2 smoked chicken breasts shredded 1 each red and yellow pepper, seeded, cored and sliced 1/4 cup pine nuts 2 pieces preserved stem ginger, chopped finely (optional)
Dressing: 1/4 cup olive oil 2 tablespoons freshly squeezed lime juice 1 tablespoon chopped cilantro leaves 1 tablespoon snipped chives Salt and pepper to taste
Garnish: Salad leaves 1 kiwi fruit, sliced
Blanch the snow peas in boiling salted water for 1 minute. Drain under cold running water. Place in a salad bowl with the remaining salad ingredients. Mix the dressing ingredients together, pour over the salad and toss well. Divide the salad into individual serving plates and garnish with salad leaves and kiwi. Serves 4.
