2 cups cooked chicken, shredded 1 cucumber, pared, seeded and sliced 1 green onion, thinly sliced 1 teaspoon ground ginger 1 clove garlic, minced 1/3 cup creamy peanut butter 2 tablespoons soy sauce 1 1/2 tablespoons red wine vinegar 1 tablespoon peanut oil 1 teaspoon sugar 1/2 teaspoon hot pepper sauce Watercress 2 tablespoons salted peanuts, chopped
In a medium bowl, mix together the chicken, cucumber, green onion, ginger, and garlic. In a small bowl, combine the peanut butter, soy sauce, vinegar, oil, sugar, hot pepper sauce, and 3 tablespoons of water. Pour sauce over the chicken mixture. Toss gently to coat. Make a bed of watercress on each plate. Top with chicken salad. Garnish with chopped peanuts. Serve hot or cold. Serves 4.
