Dressing: 1/4 cup red wine vinegar 3/4 cup olive oil 1 tablespoon Dijon mustard 1 tablespoon dried parsley 2 teaspoons dill 1 1/2 teaspoons basil
Salad: 1 pound tri-color Tortellini, cooked 1/4 pound prosciutto, diced 1/4 pound provolone, cubed 2 red peppers, chopped 1/4 cup grated Parmesan cheese
Mix ingredients for Dressing in a large bowl. Use a wire whisk and blend for 1 minute. Add Tortellini, prosciutto, provolone, red peppers, and Parmesan cheese. Toss well, cover, and refrigerate overnight.
