1/4 cup vegetable oil 1 small green bell pepper, seeded and diced 1 small red bell pepper, seeded and diced 1/4 cup chopped onion 1 garlic clove, minced 1 1/2 pound fresh green beans, cut into 1 inch pieces 1 teaspoon crumbled dried basil 1 teaspoon salt 3/4 cup freshly grated Parmesan cheese
Heat oil in heavy medium skillet over medium heat. Add bell peppers, garlic, onion and cook until onion is translucent, about 3 minutes. Add beans, basil and salt. Cover and steam until tender, about 7 minutes. Remove from heat. Stir in 1/2 cup Parmesan. Transfer to serving dish and sprinkle on remaining Parmesan cheese.
