2 pounds beef fillet, tied up 2 tablespoons green peppercorns 1/4 cup extra virgin olive oil 1 small onion, thinly chopped 1 ounce unsalted butter, cut into small pieces 2 tablespoons red wine vinegar 3/4 cup dry white wine Salt and pepper
Place the meat with the peppercorns, oil, onion, pieces of butter, and vinegar in a casserole. Let it marinate about 1 hour, turning occasionally. Turn the heat on high and cook for about 10 minutes, browning the ingredients, turning the meat on all sides. Pour in half the wine, season with salt and pepper, lower the heat, and cook for 10 minutes over medium heat. Add the remaining wine and cook about 5 minutes, turning meat occasionally. Remove the fillet from the pan and let cool for 15 minutes. Discard the string and carve the meat into thin slices. Arrange slices on a warmed serving platter and spoon the heated green peppercorn sauce on top. Serves 8 to 10. Critics rate "As the Mouse Moves" as HOT!
