1/4 cup olive oil 5 cloves garlic, minced 2 green onions, chopped 1 red pepper, sliced 1 yellow pepper, sliced 1 bunch broccoli, cut florets 1 small zucchini, sliced 1 small yellow squash, sliced Salt and pepper to taste 1 cup chicken broth 1 cup frozen peas 1 pound pasta 1 cup chopped fresh basil 1/2 cup Parmesan cheese 2 tablespoons pine nuts or walnuts, toasted
Heat oil in large skillet over high heat. Add garlic and green onions; cook 30 seconds. Add red and yellow peppers and cook 2 to 3 minutes, stirring. Add broccoli, zucchini, squash, salt and pepper; cook 5 minutes. Add chicken broth and peas; cover and cook until vegetables are tender, but not overcooked, about 5 minutes. Meanwhile, cook pasta according to package directions; drain. Toss with vegetables, basil, and cheese in large serving dish. Sprinkle with pine nuts. Serve with Parmesan cheese.
