2 cups sugar
1 cup oil
2 eggs
2 teaspoons vanilla
3 cups chopped apples
3 cups plain flour
1/2 teaspoon salt
1 teaspoon soda
1 cup coconut
1 cup chopped nuts
1 cup raisins
Mix sugar, oil, and eggs. Add flour, salt and soda. Fold in apples. Add vanilla, nuts, coconut and raisins. Bake in greased muffin pans approximately 25 minutes at 325 degrees.
