2 tablespoons oil 4 to 5 cloves garlic 2 pounds assorted vegetables, such as broccoli, asparagus and green beans, cut diagonally into 1/2 inch slices 1 8-ounce can water chestnuts, drained and sliced 2 tablespoons soy sauce Salt and freshly ground black pepper 1/4 cup toasted nuts, such as cashews, almonds or peanuts (optional)
Heat oil in a wok or large skillet. Smash the garlic by hitting the cloves with the back end of a knife handle, remove peel. Add the garlic to the hot oil and stir fry until fragrant, about 15 seconds. Remove and discard crushed cloves. Add the vegetables and stir-fry over high heat until crisp-tender. Add the water chestnuts and seasonings. Stir-fry another minute to heat through. Sprinkle with nuts and serve at once. Critics rate "As the Mouse Moves" as HOT!
