1 pound ground chuck 1/4 cup rice (raw) 1 egg 1/4 teaspoon salt 1 onion 1 carrot 1 head cabbage 1 cup lemon juice 2 cups brown sugar 4 cups tomato sauce
Combine the beef, raw rice and the egg, mixing well. Add the salt. Grate the onion and carrot, and add to the beef mixture, mixing well. Cut out the stem of the cabbage. Put it in a large pot and cover with boiling water. Let it set for 2 - 3 minutes. Pull off as many leaves as possible. Then put it back in the hot water, let it set, and pull of some more leaves. Continue until the remaining leaves are too small to use. Cut out the tough center stems of the leaves. Put a tablespoon of meat filling in the center of each leaf, roll up. Place the leaves, seam-side down, closely together in the pot. Combine the lemon juice, sugar, and tomato sauce, and pour over the stuffed cabbage rolls. Cover pot tightly. Cook over moderate heat about 30 minutes. Reduce heat and simmer another 40 minutes. Or, you can simmer for 20 minutes and then bake at 350 degrees for 20 minutes to brown the tops. Serves 8.
