10 medium onions, sliced
1/4 cup melted butter
1/4 cup sherry
2 (12 oz.) cans beer
5 cups water
2 tablespoons Worcestershire
2 cloves garlic, minced
1 teaspoon salt and pepper
1/2 teaspoon dill weed
1/8 teaspoon marjoram
3 tablespoons parsley
9 beef-flavored bouillon cubes
1/2 teaspoon dry mustard
1/2 teaspoon celery seeds
1 bay leaf
2 cups croutons
2 cups shredded Swiss cheese
Separate onions into rings; cook in butter 25 to 30 minutes. Add sherry to onions and cook 5 minutes. Add remaining ingredients except croutons and cheese and bring to a boil. Cover, reduce heat, and simmer 1 hour. Remove bay leaf. Serve in bowls topped with 2 tablespoons croutons. Sprinkle on cheese over croutons. Makes 4 quarts.
