1/2 pound mushrooms 1 small onion, quartered 2 cups chicken stock or canned low-salt broth 3 tablespoons butter 3 tablespoons all purpose flour 1/2 cup milk 1 1/2 cups half and half Salt and freshly ground pepper 1 tablespoon dry Sherry Sliced mushrooms
Finely chop 1/2 pound mushrooms and onion in a blender or processor, about 1 minute. Transfer to heavy medium saucepan. Add the broth. Cover and simmer 15 minutes. Meanwhile, melt butter in heavy medium saucepan over medium low heat. Add flour and stir 2 minutes. Add milk and cook until thickened, stirring occasionally, about 2 minutes. Mix in half and half. Stir into mushroom mixture. Season with salt and pepper. Stir in Sherry. Ladle into bowls garnish with sliced mushrooms. Makes 4 cups. Critics rate "As the Mouse Moves" as HOT!
