1 teaspoon Kosher salt 1 onion, chopped 2 stalks celery, chopped 1 teaspoon peppercorns 2 bay leaves 4 sprigs dill 4 (2 lb.) lobsters
In a large stockpot with a steamer insert and a tight fitting lid, put 1 tablespoon salt into 4 cups of water. Add onion, celery, peppercorns, bay leaves, and dill. Bring water to a rapid boil over high heat. Add the steamer basket with the lobsters in it and cover tightly. Cook lobster until shells turn bright red and their meat turns opaque, about 15 minutes. Test a leg for doneness. Remove the meat of the tail, claws, and knuckles from the shell. Serves 8. Critics rate "As the Mouse Moves" as HOT!
