2 1-pound sea bass fillets
1/4 cup peanut oil
2 tablespoons minced peeled fresh ginger
1/3 cup chopped green onions
1/4 cup soy sauce
4 teaspoons chopped fresh cilantro

Bring water to a boil in base of a steamer. Place fish on plate and arrange on steamer rack. Cover and cook until fish is just opaque, about 9 minutes per inch of thickness.  Meanwhile, heat oil in a small skillet over medium-high heat.  Add ginger and cook until crisp, 2 to 3 minutes. Transfer fish to serving platter. Pour ginger and oil over.  Top with green onions, soy sauce and chopped cilantro. Serves 2
