Chef's Daily Recipe for 06/09/03 : Veal with Truffles
"Veal with Truffles"

1 thick rasher smoked bacon
2 medium truffles
1 tablespoon oil
1 oz. Butter
1 onion, sliced
1 1/4 lbs. Shoulder of veal, cut into cubes
2 Fluid Oz. White Wine
Salt and freshly ground black pepper
Cut the bacon into small pieces. Grate the truffles finely onto a plate. Heat the oil and butter together in a large pan and gently fry the onion and bacon for a few minutes. Add the veal and cook until browned all over. Tip out any excess fat, add the wine and allow it to evaporate almost completely. Season with salt and pepper, add water to cover and simmer for approximately 45 minutes, or until the sauce reduces to just below the level of the meat. Stir in the grated truffle, mix well, season and serve. Serves 4.
