4 veal escalopes, each about 1/3 lb. Seasoned flour for coating 2 eggs, beaten 2 cups fresh breadcrumbs 1 tablespoon olive oil 1/4 cup sweet butter Juice of 1 lemon Juice of 1 lime Lime or lemon slices to garnish
Dip each escalope into seasoned flour, then into beaten egg and finally into the breadcrumbs to coat evenly. Heat the oil and butter in a frying pan until foaming, add 2 veal escalopes and half of the lemon and lime juice and fry for 3 to 4 minutes on each side. Keep warm while cooking the remaining escalopes. Garnish with lime or lemon slices. Serves 4. Critics rate "As the Mouse Moves" as HOT!
