4 fresh trout, weighing about 1 pound each, ready to cook Salt Freshly ground pepper Flour 1/2 cup butter 1/2 cup slivered blanched almonds 3/4 cup heavy cream 1/4 cup minced chives or parsley
Wash and dry the trout. Sprinkle the cavity of each with a little salt and pepper. Coat on all sides with flour. Heat the butter in a large frying pan. Add trout in one layer and cook over medium heat for about 4 to 5 minutes. Turn and cook for 3 to 4 minutes or until golden brown. Fish should flake when pierced with a toothpick. Carefully transfer the fish to a heated serving platter and keep warm in a low oven. Cook the almonds in the same frying pan, stirring constantly, until crisp and golden; do not brown. Add the cream and cook, stirring all the time, for 3 to 4 minutes longer or until sauce is thoroughly heated and thickened. Pour the sauce over the fish and sprinkle with minced chives. Serve hot.
