6 leeks, sliced
1 1/4 cups light stock
6 large tomatoes, skinned, seeded and sliced
8 oz. Mozzarella cheese, sliced
Dressing:
1/4 cup olive or sunflower oil
2 tablespoons freshly squeezed orange juice
2 tablespoons wine vinegar
1 teaspoon coarse-grain mustard
1 teaspoon honey
3 tablespoons chopped parsley
1 tablespoon chopped basil
Salt and pepper to taste
Blanch the leeks in the boiling stock for 2 minutes. Drain, place in a bowl and season with salt and pepper. Mix the dressing ingredients together and toss into the leeks while still warm. Leave to cool, then add the tomatoes. Mix together lightly, then chill until required. Transfer to individual plates, arrange the cheese on top and season lightly with salt and pepper. Serves 6.
