1 lemon
1 large chicken for boiling
8 oz. Small onions
Celery
8 oz. Carrots
3 bay leaves
3 white peppercorns
4 oz. Mushrooms
2 oz. Butter
1 egg
4 tablespoons cream (thick)
1/4 cup pink sherry
4 oz. Blanched almonds

Squeeze lemon juice over the outside of the chicken.  Put the lemon skin inside after removing all pits.  Put the chicken into a casserole, together with the whole onions, diced celery and carrots, bay leaves and peppercorns. Cover with water to come within 1 inch of the top and season lightly with salt. Cover with a lid and cook for 3 to 4 hours in a very slow oven (275 - 300 degrees). When tender remove chicken from liquid and keep warm.  Fry mushrooms in the butter.  Beat egg and cream, gradually adding 1/2 pint of the boiling stock and stirring all the time until thick and smooth. Add mushrooms, sherry and blanched almonds. Replace the chicken and surround with sauce. Serves 4.
