1/2 cup cider vinegar
6 tablespoons sugar
Pinch of cayenne
1/2 teaspoon salt
1 garlic clove, minced
2 cups fresh bean sprouts
2 cups shredded Chinese cabbage
1 cup thinly sliced carrots
1 tablespoon grated onion
1/2 cup slivered water chestnuts
1 tablespoon cornstarch
8 spring roll or egg roll wrappers
Canola oil for frying

Whisk vinegar and sugar together in a large mixing bowl.  Stir in spices, sprouts, cabbage, carrots, onion and water chestnuts.  Let sit for one hour, then drain in a colander. Return to bowl, mix in powdered cornstarch.  Fill and roll up spring roll or egg roll wrappers according to instructions.  Pour 1 inch of canola oil into frying pan and set on medium high heat.  It will take about 7 minutes before oil is hot enough.  Carefully place rolls in hot oil, and turn constantly until browned on all sides for about 5 to 6 minutes.  Drain on paper towels. Serves 8.
