1 double rack of lamb, weighing approximately 2 1/2 to 3 pounds Salt Freshly ground pepper 2 tablespoons butter 1 garlic clove, minced 1 cup fresh white breadcrumbs 1 tablespoon minced chives 1/4 teaspoon dried thyme Grated rind of 1/2 lemon Juice of 1/2 lemon
Trim as much fat as possible from the lamb. Place meat in a roasting pan, fat side down. Sprinkle with salt and pepper. Roast in a preheated hot oven 500 degrees for 15 minutes. While lamb is roasting, heat the butter in a small saucepan. Add the garlic and cook, stirring constantly, for 2 minutes. Stir in the breadcrumbs, chives, thyme, and lemon rind. When the 15 minutes are up, reduce heat to 400 degrees. Take pan with lamb from oven and spread with the crumb mixture, patting it into the meat with the back of a knife or a spoon. Return meat to oven and roast for 10 more minutes. Sprinkle with lemon juice and carve into chops. Serves 4. Critics rate "As the Mouse Moves" as HOT!
