1 1/4 cups (2 1/2 sticks) unsalted butter
3/4 cup Cocoa
1 tablespoon all purpose flour
1 cup sugar plus 1 tablespoon, divided
2 teaspoon vanilla extract
4 eggs separated
1 cup cold whipping cream (1/2 pint)
Optional chocolate curls for decoration

Heat the oven to 425 degrees.  Grease an 8 inch springform pan.  Melt the butter in a medium saucepan over low heat.  Add 1 cup sugar and the cocoa, stirring well. Remove from heat; cool. Stir in flour and vanilla. Add one a time, the egg yolks, beating well after each addition.  Beat egg whites in a medium bowl with the remaining 1 tablespoon sugar until soft peaks form; gradually fold into the chocolate mixture.  Spoon the batter into the pan.  Bake 16 to 18 minutes or until edge is firm (the center will be soft). Cool completely on a wire rack.  This cake will sink slightly in the center as it cools. Remove side of pan.  Refrigerate cake for at least 6 hours.  Beat whipping cream in a small bowl until soft peaks form;  spread over top of cake. Cut cake while cold, but let stand at room temperature before serving (about 10 to 15 minutes).  Garnish with curls. Serves 10.
