3 tablespoons butter
3 tablespoons flour
1 1/3 cups light cream or half and half
1 1/2 cups cooked pureed yellow squash, on the dry side
4 egg yolks
Salt
Freshly ground pepper
Tabasco to taste
6 egg whites
1/2 teaspoon cream of tartar

Heat the butter and stir in the flour. Cook, stirring constantly, for 2 minutes.  Stir in the cream or half and half and cook, stirring all the time, until smooth and thickened.  Beat in the squash and mix well.  Remove from heat and stir in the egg yolks, one at a time, beating well after each addition.  Season with salt, pepper, and Tabasco; this soufflé should be well seasoned.  Beat the egg whites until frothy and add the cream of tartar.  Beat until stiff and glossy. Fold gently into squash mixture.  Generously butter a 1 1/2 quart baking dish.  Turn mixture into dish. Set in a pan containing 2 inches of water. Cook in a preheated moderate oven 350 degrees until firm and puffy.  Serve immediately on heated plates.  Serves 5 to 6.
