"Salmon Steaks with Ginger"

4 salmon steaks, each 1/2 lb.
1/4 cup butter, softened
2 teaspoons grated fresh root ginger
3 oz. Fennel, sliced thinly
2 carrots and 1/2 leek, cut into julienne strips
2 to 3 tablespoons dry sherry (optional)
Salt and pepper to taste
Place the salmon steaks in a shallow ovenproof dish and season with salt and pepper. Mix the butter with the ginger and spread half on the salmon steaks. Blanch the vegetables in boiling water for 2 minutes. Drain and place on the salmon. Sprinkle with sherry, if using, and top with the remaining butter. Season lightly with salt and pepper. Cover and cook in a 375 degree oven for 20 to 25 minutes or until cooked. Salmon serves 4.
