1 tablespoon sunflower oil
1 lb. young spinach leaves
1 teaspoon grated orange rind
2 tablespoons freshly squeezed orange juice
1/3 cup pine nuts
1/3 cup golden raisins
To Garnish:
Orange slices
Croutons (optional)
Heat the oil in a deep saucepan, add the spinach and press down well. Cover and cook for 2 - 3 minutes, until the leaves have just wilted. Stir in the remaining ingredients and transfer to warmed individual serving dishes. Garnish with orange slices, and croutons if you wish. Serves 4 to 6.
