2 tablespoons butter
2 leeks sliced
1 clove garlic, crushed
1 cup Ricotta cheese
1/3 lb. Shrimp
1/2 avocado, sliced
1 tablespoon chopped parsley
4 tomatoes, quartered
1 lb. Fresh Tagliatelle
Chervil sprigs to garnish
Melt the butter in a pan, add the leeks and garlic and sauté for 5 minutes, until soft. Stir in the Ricotta and allow to melt over a low heat. Stir in the shrimp, avocado, parsley and tomatoes and heat gently, while cooking the pasta. Drain the pasta, place on a warmed serving plate and top with the hot seafood sauce. Garnish with the chervil and serve immediately. Serves 4.
