2 large red peppers
2 large green peppers
1/2 cup raisins
6 thin slices Prosciutto ham, halved lengthways
Dressing:
3 tablespoons olive oil
1 1/2 tablespoons wine or cider vinegar
1 clove garlic, crushed
1 teaspoon Dijon mustard
1/4 teaspoon salt
Black pepper to taste

Place the peppers on a baking sheet and roast in a 425 degree oven for about 30 minutes, turning occasionally, until the skin starts to blacken and blister. Leave to cool, then peel, core and slice. Place in a bowl with the raisins.  Whisk the dressing ingredients together, pour over the peppers and raisins and mix well. Cover and chill until required. Roll up the ham slices and arrange on individual plates with the pepper and raisin salad.  Serves 4.
