3/4 lb. Short shaped pasta (Penne)
3 to 4 cloves of garlic, crushed
1/2 tsp. Crushed red pepper
2 tablespoons green olive oil
1 lb. Ripe fresh tomatoes, peeled, seeded, chopped or use canned imported Italian plum tomatoes (14 oz can) crushed and drained
1/2 cup fresh Italian parsley, chopped
1/2 cup Pecorino or Romano cheese, freshly grated
Boil water to cook the pasta. In a large frying pan, sauté garlic and hot pepper in the oil for 1 minute. Add the tomatoes and cook for 5 minutes. Add the parsley and cook for 2 minutes. Drain the pasta, and transfer it to a large pasta bowl. Pour the sauce over the pasta and toss with the Pecorino or Romano cheese. Mix the pasta and sauce thoroughly. Serve immediately. Serves 4.
