4 dozen mussels
1 cup onion, diced
4 cloves of garlic, crushed
1/4 tsp. Crushed red pepper
2 tablespoons green olive oil
1 cup dry Italian white wine
1 tsp. Italian herb seasoning
3 cups fresh plum tomatoes, diced, peeled, and seeded; or 2 cups of canned Italian plum tomatoes, crushed
1/2 cup fresh Italian parsley, chopped

Scrub the mussels with a brush to remove the sand from the shells, and rinse well.  Remove the beards. Discard mussels that are open.  Rinse the mussels in cold water and drain. In a large skillet, sauté the onion, garlic, and crushed pepper in the oil for a few minutes. Add the wine and Italian herb seasoning; cook for 2 to 3 minutes; add the crushed tomatoes and cook for 5 minutes.  Add the mussels, cover and simmer for 4 to 8 minutes or until the mussels open.  Use a large slotted spoon to remove the cooked mussels. Discard any mussels that do not open. Add the parsley to the sauce.  Spoon the mussels into individual shallow bowls, and pour the sauce over the mussels.  Serves 4.
