2 one pound cans tart red cherries 3/4 cup sugar 3 1/2 tablespoons cornstarch 1/4 teaspoon salt 1/2 teaspoon grated lemon rind 2 tablespoons lemon juice Red food coloring 1 unbaked 9 inch pie shell
For topping: 1/2 cup flour 1/2 cup sugar 1/2 teaspoon cinnamon 1/4 teaspoon mace 1/3 cup butter
Preheat the oven to 400 degrees. Drain the cherries and reserve one and one quarter cups liquid. Combine the sugar, cornstarch and salt. Add the reserved cherry liquid and cook until thick, stirring constantly. Add cherries, the lemon rind, lemon juice and a couple drops of red food coloring. Pour cherry mixture into the pie shell. To prepare the topping, combine the flour, sugar, cinnamon and mace in a bowl and cut in the butter until the mixture is crumbly. Sprinkle over the cherries. Bake about 30 minutes or until the crust is browned lightly. Serve warm. Serves 6. Critics rate "As the Mouse Moves" as HOT!
