3 tablespoons butter
1/2 cup chopped onion
1 1/2 pounds large shrimp, shelled and deveined
1/2 cup dry white wine
3/4 cup cream
1/4 cup Pesto, homemade or jarred

In a large frying pan, melt butter over medium low heat. Add onions and cook 2 to 3 minutes, or until softened. Add shrimp and toss to coat with butter. Raise heat to medium high.  Add wine and cook, stirring, until shrimp begin to turn pink, about 2 minutes. Stir in cream and Pesto. Cook 4 to 5 minutes, or until cream and Pesto are thick and bubbly, and shrimp are pink and opaque throughout.  Serves 4 to 6.
