4 medium onions
2 oz. Butter
2 pints of brown stock
Salt and pepper to taste
4 rounds French bread
2 - 3 oz. Grated Gruyere Cheese
Cut the onions into thin rounds and fry in the hot butter until pale gold. Do not allow to become too dark. Add the stock and seasoning and simmer for approximately 20 minutes. Put the rounds of bread, which can be toasted if you wish, into 4 soup cups, add the soup, sprinkle on the grated cheese. For French onion soup gratinee, make the soup as above, but brown the cheese under a hot grill.
Onion soup serves 4.
